Gluten Free Potato Scones

 These delicious potato scones can be served with whatever you like. Bacon, smoked salmon, runny eggs or just on their own with some chilli sauce...


They are really easy to make and a great way to use up leftover mashed potato. They could be made plain, but my herby version is really flavoursome - the more herbs, the better.
 
 This recipe has been adapted from a Jamie Oliver recipe.




Recipe:
(Makes 4 scones)

500g potatoes, peeled & cubed
100g plain gluten free flour blend, plus extra for dusting
1/2 bunch chopped fresh parsley
1 knob of margarine
1/2 tsp baking powder,
1 tsp chopped fresh chives, to serve
2 tbsp. sunflower oil, for frying
Seasoning

Place the potatoes in a pan of cold water, bring to the boil and then cook until soft. Mash the potatoes with the margarine.

Allow to cool then mix in the gluten free flour, parsley, baking powder and plenty of seasoning.

Using your hands, knead the mixture and divide into four. Lightly dust a board and some crumpet rings. Pack the potato mixture into the crumpet rings to produce even cakes. You can just shape with your hands if you don't have any crumpet rings.

Remove from the crumpet rings and heat the oil in a large pan. Fry for about 10 minutes (5 on each side) until golden brown. Serve the potato scones scattered with chives.
