Basic Baked Eggs Recipe

These baked eggs are great for a treat breakfast or brunch and look great when serving to friends...









They are delicious served with crusty bread, toasted soldiers or mini hash brown waffles. Although you can follow this recipe, you can put anything you like in bottom of the ramekins.


Recipe:
(Serves 2)

4 slices wafer thin ham
2 tbsp grated parmesan
6 small eggs
2 tbsp chives
Salt & pepper
Margarine for greasing

Preheat the oven at 220c and grease two ramekins with the margarine.

Place the ham in the bottom of the ramekins and top with the cheese and some of the chives.

Crack three eggs into each ramekin and season.

Bake in the oven for about 20 minutes until cooked to your liking. Start checking on them after 15 minutes, you don't want them to overcook.

Sprinkle with the remaining chives, season again with pepper and serve with bread, toast, mini waffles or hash browns.
