Easy Prawn Curry Recipe


This curry so so easy and delicious. It goes well with my homemade gluten free naan breads.




Recipe:
(serves 2)

200g raw king prawns
1 red onion, finely chopped
1 tsp ground ginger
1 tsp garam masala
1 tsp ground cumin
400g tin chopped tomatoes
1 50g sachet creamed coconut
2 tsp red curry paste
2 tsp curry powder
8 cherry tomatoes, sliced
100g spinach, optional
tablespoon vegetable oil, for frying
1/2 tsp salt
1/2 tin water
1 tbsp tomato purée
2 tbsp freshly chopped parsley

Heat the oil in a medium pan, add the onions and fry until slightly softened. Add the ginger, curry powder, cherry tomatoes and curry paste, and stir fry for a few minutes longer.

Next add the chopped tomatoes, purée, coconut and seasoning. Fill half the tin that contained the tomatoes with water and stir that into the sauce.

Simmer for 5 minutes before tipping in the prawns and cooking until they are cooked through and pink. If using the spinach add it now and stir in until wilted.

Serve with rice or gluten free naan breads and pappadums. Luckily pappadums are usually gluten free (but always check the label).
