Classic Gluten Free Pancakes Recipe

Pancake Day is in a couple of weeks so I thought I'd better get working on my gluten free recipe...



This recipe is so simple and makes making pancakes quick and easy. 


You can fill them with whatever you like, but my favourites are (sweet) lemon and sugar and (savoury) ham & tomato.



Recipe:
(Makes 6 pancakes)

200g Plain Gluten Free Flour Blend
500ml skimmed milk
2 eggs
Pinch of salt 
Sunflower oil for frying


Place all the ingredients into a bowl and whisk like mad until smooth. 

Once the mixture is smooth, heat a splash of oil in a large frying pan.

Spoon a ladle full of the batter into the pan then swill it about until it covers the bottom of the pan in a thin and even layer. 

Cook for a few minutes until golden then flip over to cook the other side for a few minutes (again, until golden). Repeat 5 more times until you have 6 pancakes (whisk the mixture again in between each pancake, if needed).
