Pea Fritters Recipe

I originally saw this recipe on this lovely website and thought it would be a great recipe to develop and make gluten free...


 
 Not only are these lovely fritters packed full of goodness, but taste great too. I like to use gram flour as it gives them a bit more substance and a nice texture.


They are really nice with a side salad and dollop of chilli jam or a runny egg.

 
Recipe:
(Serves 2-3)
 
500g peas, defrosted
3 eggs
2 spring onions, roughly chopped
1 ½ cups gram (chickpea) flour
1 handful of fresh parsley
Dash of sunflower oil, plus extra for frying
Plenty of salt & pepper
 
Put all the ingredients into a food processor and pulse until combined. Don't over do it, leave some of the peas whole.

Heat the oil in a frying pan, spoon heaped tablespoon sized dollops into the pan and cook for a couple of minutes. Press down slightly on the fritters with a spatula to make a nice shape.

Once the underside is golden, flip over and cook the other side until golden and cooked through (about 5 minutes on each side).
