Slow Cooked Pulled Pork Recipe

Using the slow cooker for this pulled pork couldn't be easier...


 
It feels a bit silly even writing up this recipe because it is SO easy. Cooked this way, the pork just pulls apart so easily and, as it can't lose any moisture, it doesn't dry out at all.


I like BBQ pulled pork but I don't put the sauce in while it is cooking so I have the option to have some of the joint plain and some BBQ flavoured. This is the sauce I usually use.



There are usually lots of leftovers which is good for sandwiches, in place of mince pork, tacos, topping waffles or pizzas.

 Recipe:

1.5kg pork shoulder joint
Sunflower oil
Pinch of salt

For BBQ pulled pork:
6 - 8 tbsp gluten free BBQ sauce (or to taste), optional
1 tsp oregano
Salt & pepper
Sunflower oil

Season the pork shoulder with salt and place in a slow cooker. Drizzle with a tiny bit of oil. Cook on low for about 8 hours (start checking it after 7). Simple.

Once the pork is cooked through, falling apart and off the scales hot (use a meat thermometer), remove from the slow cooker and allow to cool.

Once cool enough to handle, remove any string and fat then start pulling the meat apart with forks. Once done, you can serve.

To make BBQ pulled pork:

Heat 2 tablespoons of oil in a large frying pan, add the pulled pork, oregano and seasoning. Stir fry for a few minutes until completely hot through. Add the BBQ sauce and stir fry until combined and juicy.

BBQ pulled pork is amazing served with soft gluten free rolls, corn on the cob, slaw and sweet potato wedges.
