Pulled Pork Grilled Cheese Sandwiches

This is such a simple one but it is insanely good. Not healthy at all but a great way to use up leftover pulled pork.



It is best to use big the biggest bread you can find so I use M&S gluten free brown bloomer slices. It is quite expensive though.


Recipe:
(Makes 3)
 
 6 slices gluten free bread (bloomer slices)
250g grated strong cheddar
150g leftover pulled pork 
2 tbsp oil
2 tbsp gluten free BBQ sauce, plus extra for serving 
1/2 red onion, finely sliced
Margarine
Sunflower oil, for frying
Pinch of salt

Heat 1 tablespoon of oil in a small frying pan. Add the sliced onion to the pan and fry on a medium heat for approximately 8 minutes until softened and golden. Pour in another tablespoon of oil along with the BBQ sauce, salt and pulled pork. Stir fry until the pork is piping hot and covered in BBQ sauce

Meanwhile, spread a thin layer of margarine on one side of each slice of bread and lay out three of the slices (margarine side down) on a board. Top each of the three slices with 1/6th of the grated cheese.

Divide the pulled pork mixture between the three cheesy slices then top each one with another 1/6th of the cheese and top with another slice of bread (margarine side up).

Firmly press down on each one and heat a tablespoon of oil in a large frying pan. Add the sandwiches and cook for a few minutes on either side, pressing down regularly with a spatula so the cheese and pork combine.

Cut each sandwich in half and serve with the extra BBQ sauce.
