Gluten Free Sticky Pork Baguettes

This is a delicious way to use up leftovers from your Sunday roast...



I guess this would also work well with leftover pulled pork. You can use whatever gluten free stuffing you usually have with your roast. I make an Irish potato stuffing from a family recipe. Here is a similar recipe.

Recipe:
(Serves 2 for dinner or 4 for lunch)

200g leftover roast pork
400g leftover gluten free stuffing 
100g leftover apple sauce
2 gluten free baguettes (I use M&S)
2 tbsp honey 
2 tbsp gluten free soy sauce 
2 handfuls lambs lettuce 
2 tbsp sunflower oil, for frying

Preheat the oven to about 190c.

Place a large frying pan on a medium heat, add the oil and once hot, add the pork. Cook for 10 minutes until piping hot right through and golden around the edges.

Add the honey and soy sauce, turn heat up and cook for a further 5 minutes until dark and sticky, stirring constantly so it is all coated.

Meanwhile blitz the stuffing in a microwave for a few minutes until piping hot. Heat up the baguettes in the oven, remove then cut them in half length ways (three quarters of the way through, so they still hold together).

Spread apple sauce over both sides of the baguettes, spread the stuffing on top of that and divide 1 handful of the leaves between the two baguettes.

Divide the pork between the two baguettes, cut each one in half and serve with the remaining lettuce leaves.
