Goats Cheese & Avocado Crostini

This is a delicious recipe for vamping up your cheese on toast.. 



 It is perfect for breakfast or lunch and is easy and healthy. You can use any gluten free bread, but I like the M&S Boule.











   Recipe:
(Serves 1)

40g hard goats cheese, thinly sliced
2 slices wafer thin ham, sliced
1/2 avocado
2 cherry tomatoes, sliced
2 small slices gluten free bread
Splash of lemon juice
Salt & pepper
Olive oil

Lightly toast the bread and set the grill to a medium to high temperature.

Peel the avocado and place it & the lemon juice to a food processor and blitz until slightly puréed.

Spread the avocado onto the toasted bread. Add the tomatoes and ham then top with the goats cheese.

Season and then place under the grill for 3-5 minutes until the cheese is bubbling & golden.
