Baked Avocado Fries with Dippy Eggs

This might seem like a weird combo but avocados go with eggs in so many other ways so why not with soft boiled eggs.

I've previously made soft boiled eggs with grilled cheese pesto soldiers (awesome) but I wanted something even more interesting to go with my weekend eggs. 

 These fries don't just have to be served with eggs, you can serve them on their own, or as a side with a burger.

Recipe:
(Serves 1)

3 eggs
1 avocado
2 slices of gluten free bread
3 tbsp rice flour
Pinch of salt
Sunflower oil

Grease a baking sheet with some oil and preheat your oven to 220c. 

Whizz the slices of bread in a food processor for about 2 minutes until fine breadcrumbs are formed then place in a shallow bowl. Crack and whisk one of the eggs into another shallow bowl and also place the flour into a third shallow bowl. 
 
Slice your avocado into approximately 1/2cm slices then coat one in the flour, then dip into the egg, coat in the breadcrumbs then place on the baking sheet. Repeat with all the avocado slices and drizzle with a half a tablespoon of oil. 

Bake the avocado for 10 minutes, flipping half way through.

While the avocado is baking, bring a pan of water to a raging boil. Place the two remaining eggs in the pan and boil for approximately 4 minutes (or to your liking).

Serve.
