Loaded Potato Wedges Recipe

This is my ultimate comfort food. It contains most of my favourite ingredients; guacamole, bacon and cheese.. so you can't really go wrong.






It's not very healthy, but there's no harm in having a treat once in a while.

Recipe:
(Serves 2)

3 - 4 large potatoes, cut into wedges
6 rashers streaky bacon, chopped 
1 x 200g tub guacamole 
2 tsp paprika 
6 tbsp sunflower oil
120g cheese, grated
80g frozen corn, defrosted
2 eggs
Pinch of salt
 

Place the potato wedges in a pan of cold water then bring to the boil. Turn down to a simmer for 10 minutes. 

Meanwhile, preheat oven to 190c. Pour 4 tbsp of the oil into a baking tray and place in the oven while it warms up. 

Drain potatoes and transfer to the tray of hot oil. Return to the oven and bake for 45 minutes, turning regularly. After 20 minutes, add the paprika and 2 last tablespoons of oil, toss and return to the oven. 

Fry the bacon in a frying pan until golden and crisp then remove from the pan with a slotted spoon, leaving behind the bacon fat.
 
Crack the eggs into the hot pan and fry for about 3 - 4 minutes until cooked to your liking.

Meanwhile, remove the wedges from the oven, divide between two oven proof bowls, top with the cheese and then return to the oven for 4 - 5 minutes until the cheese is bubbling.

Finally, sprinkle the corn over the cheesy wedges, divide the guacamole between the two, then sprinkle over the bacon and top with a fried egg each.
