Quorn Mini Taco Cups

These are great for an appetiser at a dinner party or a fun snack...


You can use real meat mince for this recipe but I used Quorn mince as it is now gluten free and I was cooking for a veggie.


Recipe:
(Makes 15)

4 - 5 GF corn tortillas (depending on their size), refreshed in a dry pan if needed
100g Quorn mince
1/2 sachet taco seasoning
5 cherry tomatoes, sliced into 3
30g feta
1 tbsp chopped fresh parsley
Guacamole
Salt & pepper
Sunflower oil
Water

Preheat the oven to 200c. Using a 6cm cutter, cut out small rounds from the tortillas until you have around 15 mini ones.

Grease a bun tin with some oil and press the mini tortillas into the cups (they probably won't stay exactly where you want). Bake in the oven for about 10 minutes or until golden and crisp.

Meanwhile heat a tbsp sunflower oil in a frying pan and add the Quorn mince. Cook for a few minutes and add the taco seasoning and a big glug of water. Simmer for 10 minutes stirring regularly and adding more water if it gets absorbed.

Divide the mince between the taco cups, top each one with 1/2 a tsp guacamole and a slice of tomato. Crumble over the feta and return to the oven for 4-5 minutes until the feta is gooey.

Season, drizzle with a little oil and sprinkle with parsley. Serve hot or cold.
